BEFORE YOU START: CHOOSE ONLY HIGH-QUALITY YERBA MATE

The quality of yerba is key in determining the final flavor, aroma and texture of your drink, so make sure it’s up to your standards. Such knowledge comes with experience, of course, but there are a few signs that will help you recognize high-quality mate. Good yerba will have a yellowish green color, a balanced texture of leaves, stems and dust, and a fresh, slightly roasted aroma. If you want to learn more about different types of yerba, click here.

STEP 1: POUR THE YERBA INTO THE GOURD AND SHAKE

Fill your gourd with mate about halfway through. Then turn the container upside down and shake; this is necessary to distribute the herbs evenly and make sure there is no dust left at the bottom of the cup blocking the straw.

STEP 2: TILT AND ADD WATER

Next step is to tilt the gourd slightly (at about 45 degrees) to make sure all herbs stay on one side, pouring a little bit of hot – but not boiling! – water into the cup. Let the brew moisten and rest for a minute.

STEP 3: INSERT THE BOMBILLA

Following the water, put the bombilla in by sliding it along the internal wall of the gourd and try not to move it again. Now you’re ready to start brewing!

STEP 4: BREW

Gradually and slowly add the rest of the water, pouring it into a hole next to the bombilla. Fill, drink, repeat! Enjoy you perfectly brewed cup of yerba mate.
